Grilled Chicken, Shrimp and Crawfish Fettuccine

1/4 lb. butter 1 cup onion
1/2 cup bell pepper 1/4 cup celery
2 tsp. garlic 2 tbs. parsley
2 tbs. whole basil 2 tsp. salt
2 tsp, black pepper. 1 tsp. cayenne
1 lb. peeled crawfish 3 cups heavy cream
1 lb. velveeta cheese 1 cup grilled chicken, cubed
1 cup cooked shrimp, deveined
1 cup grated parmesan cheese
1lb. (weight before cooking) cooked fettuccine
1 cup chopped green onion

Chop all vegetables to medium texture. In a 3-quart saucepan, heat butter to hot. Add onion, bell pepper, celery, garlic, parsley, and basil and sauté on high until onions begin to wilt. Add salt, black pepper, cayenne pepper and crawfish and sauté for 5 minutes. Add heavy cream and stir well. Cover, reduce heat to low, cover and simmer for 5 minutes (stirring occasionally). Then add grilled chicken and cooked shrimp and stir in well, bring back to a simmer bubble.

Next, add velvetta cheese in small chunks and stir until cheese is dissolved. Add Parmesan cheese. Stir well. Add cooked fettuccine to mixture and stir until completely mixed together. Cover and remove from heat. Allow standing for 5 minutes. Uncover and add green onion. Stir well. Serves 6 – 8.
